The snack that satisfies..when you’re home all day and want to eat EVERYTHING
OK. The struggle is real. All this time at home can lead to raiding the fridge and pantry. For me, the 4:00 hour is tough. My lunch has worn off, and I’m thinking about what to make for dinner, so I’m hungry. And as I’m thinking and looking….I’m snacking. Next thing you know, I’ve eaten enough to not even be hungry for dinner. Is it just me?
I love watching the Food Network, and one Saturday I happened upon an episode of Trisha Yearwood’s cooking show. It’s now one of my favorites, like I could so hang with her and Ree Drummond (the Pioneer Woman). She made a recipe I could embrace: power balls. There’s a lot of power packed into this little ball of goodness, and it’s sweet and satisfying enough to give me the energy to make dinner without grazing.
Here’s the recipe:
- 2 cups old fashioned oats
- 1/2 cup mini chocolate chips
- 1/2 cup dried cranberries
- 1/2 cup sunflower seeds
- 2 tbsp flax seed
Pulse these dry ingredients in a blender or food processor. Then pour into a bowl and add:
- 1 cup crunchy peanut butter
- 1/2 cup honey
Blend until fully combined, cover and refrigerate for 30 minutes. Form balls from the mixture and layer in a bowl with waxed paper. Refrigerate and enjoy!
