Little Baby Apple Pies

I have always loved little things.  I think the love affair started when I was little and played with Barbies.  All those little shoes and accessories….and all the little kitchen things.  And I remember my sister and I making cakes in the little Easy Bake Oven.  And shrinky dinks.  Remember those?? Gosh.  My youngest son loved Legos and Playmobil, so of course I secretly obsessed over those little figurines.  I still have a Wonder Woman Lego figure hanging on to my car’s odometer “reset” button.  OK, this is getting weird.

Enough nonsense.  We’re talking about apple pie here.  Little baby apple pies.  There’s no hassle of peeling a dozen apples or the oven mess to clean up after the big pie has bubbled over in the oven.  All you need are some refrigerated pie crusts and a jar of Adams Apple Pie Jam.  I’ve often been asked if this jam can be used to make a pie.  The answer is, well, sorta.  It’s not really pie filling and not nearly enough to make a pie.  But if you just need a little dessert for a few friends and don’t have a lot of time, this is such a treat!

Ingredients:

Adams Apple Pie Jam

2 refrigerated pie crusts

Egg (beaten)

Cinnamon and sugar

Directions:

Preheat oven to 375 degrees.  Unroll pie crusts.  Using a 3″+ jar lid, biscuit cutter, glass, or whatever you have, cut circles and place onto baking sheet. You’ll get about 4 little pies (8 circles) out of each crust. Top each circle with a heaping tablespoon of Adams Apple Pie Jam. Place other pie crust circle on top and seal edges with a fork.  Cut little slits on top of the pies, spread beaten egg on top crust with basting brush, and sprinkle with cinnamon and sugar.

Bake for about 25 minutes or until golden brown.  Enjoy!
