Best Banana Bread ….EVER. Comfort Food Chronicles #5

I think I mentioned my favorite cookbook.  You know, the Southern Living one. I swear it has made me look like a better cook than I am…many times over.  This recipe is no exception.  As you’ll see in the video, my youngest son Avery makes an appearance and is overjoyed at the fact that I was making banana bread.  His favorite way to eat it is warmed up with a little bit of butter on it.  I trained him well.



Dry Ingredients:

  • 3 cups all purpose flour
  • 3/4 tsp salt
  • 1 tsp baking soda
  • 2 cups sugar
  • 1 tsp ground cinnamon

Blend these ingredients together.  In a separate bowl, blend these ingredients together, then add to the dry ingredients:

  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 2 cups mashed ripe bananas
  • 1 (8oz) can crushed pineapple, drained
  • 2 tsp vanilla extract

Spoon batter into 2 greased loaf pans and bake at 350 degrees for 1 hour and 10 minutes.  Yield: 2 loaves–and they freeze well too!
