I never really thought of making turkey for dinner. Turkey is either sliced thin for sandwiches, or it’s reserved for Thanksgiving. That’s it. Until a neighbor told me about making turkey breasts that were better than any chicken you could ever imagine. She said she found them at Lidl, so I went on a mission to find them. I mean, what could it hurt? Right? It would be great to have something else to add to the dinner routine. They were so good that I have told anyone who would listen that they HAVE to try them. And the magic marinade, you ask? Oh. Let me tell you. It’s Adams Apple Cider Slaw and Salad Dressing. Yep.
I marinated the turkey breasts in the dressing (in a ziploc bag) for 24 hours. Don’t you love it when it’s dinner time and you realize you were a genius yesterday and planned ahead? Me too. That was the case tonight, and all I had to do was throw them on the stove. We are without a grill right now, and that would have been preferable, but the stove works great for these. I poured everything in the pan, dressing and all, and just let them cook for awhile. For the sides, I cut up potatoes and carrots and pan roasted them for 40 minutes at 425 degrees after drenching them in olive oil, salt and pepper, and a few shakes of parmesan cheese.
So there you have it. Super complicated, huh? An easy, delicious, healthy dinner.
